Loaded Sweet Potato Street Fries
• Roast sweet potatoes in chip/wedge shape
While they roast-
• In a bowl mix tin of chickpeas, sun dried tomatoes, garlic, mixed herbs, paprika, chilli flakes and table spoon olive oil
• Mix grated cucumber, fresh dill, garlic, lemon juice and parsley with natural yoghurt (I used goats milk yoghurt)
• Rip up a lettuce into wedges
• Once the chips are cook cover with the chickpea, yoghurt, lettuce and I also added chillies, jalapeños, gherkins, goats cheese/feta, and the rest of the dill and parsley
