Roast Sweet Potato Salad

You will need:

X2 Sweet potatoes (depending on size)

X1 Yellow pepper

Cherry tomatoes (roughly 20)

Baby leaf spinach (large handful)

Fresh basil (small handful)


Feta or goats cheese

1 Chilli (optional)

½ Lemon

Dried Italian herbs

  1. Peel and dice sweet potatoes, slice mushrooms- roast in oven roughly 40 mins. with fry light spray/coconut oil turning often

  2. Half tomatoes, rip basil, slice yellow pepper, chop feta/goats cheese

  3. Once mushrooms and sweet potatoes ready remove from oven and add other ingredients mix through and add squeeze of lemon juice, season with salt & pepper and sprinkle of dried Italian herbs (sliced chilli if adding)
